Junmai - literally translating to "pure rice," is made completely from rice, water, yeast, and koji (a fermented rice). Bright clear pale white gold in color. Delicate, woody aromas and flavors of melon, bamboo shoot, and brewer's yeast with a soft, bright, dry medium-full body and a complex apple custard, nougat, and delicate spiced pineapple finish.
